Popsicles has a way to take you back to the summer of your childhood. Maybe you’re waiting in line for an ice cream truck. Or wrap up in a towel after a day of swimming at the pool/lake/beach. Maybe you’re running around catching fireflies at dusk. All of these moments are made sweeter with a stone in hand. Our cool coconut ice cream pops will please kids, adults and kids alike.

Coconut Fudge Pops
These are the best ice cream cakes you will ever have. We like to keep them on the bittersweet side, but you can definitely add a little maple or date syrup if you like. Adding other chocolate-friendly ingredients like sliced banana, espresso powder, or almond butter would also be great, so feel free to use them as a base recipe and experiment.
Key Lime Pops
We wanted to make a super tart, lime juice, but all that juice adds water content to this tart, which can result in a very cold texture. To counter that, we opted for evaporated coconut milk, which is just a bit more concentrated coconut milk. The evaporated coconut milk is already slightly sweet, so we only need a small amount of added sweetener (don’t skip it, though). We call for a liquid sweetener (agave or honey), which also helps prevent colds.
